These Plantain Croutons are a perfect Paleo, Vegan, and Gluten-Free alternative to traditional croutons. They are crispy, flavorful, and make a great addition to salads or as a tasty snack.
Ingredients: 2 ripe plantains. 2 tablespoons coconut oil. 1 teaspoon sea salt. 1/2 teaspoon black pepper. 1/2 teaspoon paprika. 1/2 teaspoon garlic powder.
Instructions: Preheat your oven to 375F 190C. Peel the ripe plantains and cut them into small bite-sized pieces. In a bowl, toss the plantain pieces with melted coconut oil until they are evenly coated. Add sea salt, black pepper, paprika, and garlic powder to the bowl, and toss the plantains again to ensure they are well-seasoned. Spread the seasoned plantain pieces evenly on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until the plantain croutons are golden brown and crispy.
