Sally’s Apizza - New Haven, CT

Half plain tomato pie, half mozzarella tomato pie pizza
Sally’s had, up until this point, been my pizza white whale. Despite growing up nearby, the constant long wait to get in meant that my family never went. Even once I was old enough to have the opportunity to branch off and go by myself, not being open during lunch hours typically meant going to Pepe’s or somewhere closer to home.
While all New Haven pizza treats “plain” as not having mozzarella, only Sally’s is considered to have plain as its specialty. Naturally, this made me skeptical - pizza without cheese? I decided to hedge my bets - half plain, half cheese. The cheese was exceptional - very thin, light amount of cheese and sauce, and an immaculate crust that was somehow crisp, chewy, and soft. The crust also contributed the majority of the flavor to the pizza, which while particularly notable in this pizza, seems to be somewhat of a trend for the New Haven style.
The plain pizza took me completely by surprise. While the cheese pizza had a flavor dominated by the crust, the plain had more sauce than the cheese and added a huge, bright tomato flavor that perfectly intermixed and balanced the slightly burnt, bready crust flavor. The plain is easily in contention for the best pizza I’ve ever had, and I can pretty confidently say that it’s my favorite example of the New Haven style. In the brewing industry, brewers like to evaluate other breweries by how good their pilsner is, a style that is simple but delicate and has nothing to hide its flaws behind. I think the same can be said about the plain pizza - no toppings or cheese to mask any imperfections. This was truly a masterpiece.
