This marinated keto baked salmon is packed with flavor and perfect for a low-carb diet. The marinade adds a delicious kick to the salmon, making it a satisfying and healthy meal option.
Ingredients: 4 salmon fillets. 2 tablespoons olive oil. 2 tablespoons soy sauce or coconut aminos for soy-free option. 2 cloves garlic, minced. 1 tablespoon fresh lemon juice. 1 teaspoon grated ginger. 1 teaspoon erythritol or preferred keto-friendly sweetener. Salt and pepper, to taste. Sesame seeds, for garnish optional. Chopped green onions, for garnish optional.
Instructions: In a small bowl, whisk together olive oil, soy sauce, minced garlic, lemon juice, grated ginger, and erythritol. Place salmon fillets in a shallow dish or resealable plastic bag, and pour marinade over them. Ensure the salmon is well coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours. Preheat oven to 375F 190C. Remove salmon from marinade and place on a baking sheet lined with parchment paper or lightly greased. Season salmon with salt and pepper to taste. Bake in preheated oven for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork. Garnish with sesame seeds and chopped green onions, if desired, before serving.
