Ingredients: 4 boneless, skinless chicken breasts. 1 cup shredded cheddar cheese. 1/2 cup salsa. 1/4 cup sour cream. 1 teaspoon chili powder. 1/2 teaspoon cumin. Salt and pepper to taste. Chopped fresh cilantro for garnish.
Instructions: Preheat oven to 375F 190C. Make several deep cuts across each chicken breast, being careful not to cut all the way through. Season chicken breasts with chili powder, cumin, salt, and pepper. Mix together salsa and sour cream in a small bowl. Stuff each cut of chicken with a generous spoonful of the salsa mixture. Place stuffed chicken breasts in a baking dish. Bake for 25-30 minutes, or until chicken is cooked through. Sprinkle shredded cheddar cheese over the chicken during the last 5 minutes of baking. Garnish with chopped cilantro before serving.
