Ingredients: 4 boneless, skinless chicken breasts. 1 cup salsa verde green salsa. 1 can 4 oz diced green chilies, drained. 1 teaspoon ground cumin. 1 teaspoon garlic powder. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/2 cup chopped fresh cilantro. Juice of 1 lime.
Instructions: Place chicken breasts in the slow cooker. In a bowl, mix salsa verde, green chilies, cumin, garlic powder, salt, and black pepper. Pour the salsa verde mixture over the chicken. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender. Before serving, shred the chicken using two forks and mix it with the salsa verde sauce in the slow cooker. Stir in chopped cilantro and lime juice. Serve hot over rice, in tacos, or with your favorite side dishes.
