Day 7 of 30
Look at me go! One week down already. My oh my how time does fly.
Just like I said yesterday- today was leftover day. And just like I said a few posts ago- overnight oats- not a good idea after 3 days. Sad to say those hit the garbage- and last time I made them I halved the recipe. Next time I’ll have to quarter it. That’d be the perfect serving. For lunch we reheated those delicious black bean burgers. Still good a second day. For supper we decided to use up that lentil loaf I made 2 nights ago, or what my wife calls it- ‘salt loaf’. Yea it was a lot a bit too salty. So we tried to figure out a way to make it edible instead of wasting it and we did. We made pasta and used the salt loaf.. I mean lentil loaf, for a pasta type sauce. Broke it down into a crumble and used up the rest of our cashew sauce and voila. It didn’t really turn into a sauce at all but it was actually edible unlike before. Aaaannndd- we got rid of a lot of containers in our fridge. Helping my wife's OCD one leftover day at a time.
Today I ventured off and made bread crumbs. Yup! Used my homemade bread, crumbled it up, and baked it in the oven. Bam! Bread crumbs.
And like promised yesterday, I currently have some vegetable broth on the go. Cut up a bunch of veggies, add salt, herbs, spices and a shit ton of water- simmer for like the whole length of a movie or two- strain and put in some jars or containers of sort. Gonna use it for soups and other rando recipes that call for it.
