One of the toughest things to explain to anyone about saffron crocus is that the majority of stock photos available of it are just plain wrong.
The first two images shown here, the left and the center, are two examples of Crocus vernus, good ol’ spring crocus. These grow in a wider range of climates, bloom in spring and can be forced in pots out of season which makes them good photo candidates. The majority of stock pictures claiming to be saffron are these flowers next to saffron spice in a bowl or package.
The third image, the one on the right, is Crocus sativus, the saffron crocus. It blooms only in the fall, it really prefers to be planted in the ground and is beheaded right before or right after it opens, the traditional method of harvesting the three red stigmas, the plant parts we know as the spice saffron.
