Ingredients: 2 cups all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup packed brown sugar. 1 large egg. 1 teaspoon vanilla extract. 1 cup chocolate chips. 1/2 cup chopped nuts optional. 24 small mint chocolate patties, unwrapped.
Instructions: Preheat the oven to 350F 175C. In a medium bowl, whisk together the flour, baking soda, and salt. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy. Add the egg and vanilla extract to the butter mixture, and beat until well combined. Gradually add the dry flour mixture to the wet mixture, and mix until just combined. Stir in the chocolate chips and chopped nuts if using. Scoop about 1 tablespoon of cookie dough and flatten it in your hand. Place a mint chocolate patty in the center and fold the dough around it, sealing it completely. Shape the dough into a ball and place it on a baking sheet lined with parchment paper. Repeat the process for the remaining dough and mint patties, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the cookies are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes. Transfer the cookies to a wire rack to cool completely before serving.
