I tried some really hard to come by beef tonight: Sanuki olive fed wagyu rib eye! This stuff is available in limited supply at @DelmonicosNYC, so you've got a once-in-a-lifetime opportunity to try if it you're in the area. Unparalleled tenderness, and the fat renders out to a buttery, yet not oily texture. It's rich, but not heavy. @ChefBillyOliva nailed it as usual - SWIPE LEFT to see. 10/10. I recommend splitting this stuff as an appetizer with a small group, and then diving into some larger dry-aged USDA prime cuts for your entree. Go get it. You'll thank me after! . .
