Fellow hen Shira is a dedicated slow cooker-er….and she’s helping to inspire me to use mine more often! She shared a recipe with me for Thai Chicken with Peanut Sauce. The original recipe suggests serving the dish with rice noodles - but I decided to be healthy and serve with some iceberg lettuce cups/wraps.
