These Poblano Sweet Potato Tacos are a delightful blend of flavors and textures. Roasted sweet potatoes, poblano peppers, and red onions are combined with black beans, corn, and fresh toppings, all drizzled with a zesty lime dressing. It's a perfect balance of sweet, spicy, and tangy flavors that will satisfy your taco cravings.
Ingredients: 2 large sweet potatoes, peeled and diced. 2 poblano peppers, seeded and chopped. 1 red onion, thinly sliced. 2 tablespoons olive oil. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 8 small tortillas. 1 cup black beans, cooked and drained. 1 cup corn kernels. 1 cup cherry tomatoes, halved. 1 avocado, sliced. 1/2 cup fresh cilantro leaves. 1/2 cup Greek yogurt. 2 tablespoons lime juice. 1 teaspoon honey. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: Preheat your oven to 400F 200C. In a large bowl, toss the sweet potatoes, poblano peppers, and red onion with olive oil, cumin, chili powder, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes or until they are tender and slightly caramelized, stirring once halfway through. While the vegetables are roasting, prepare the zesty lime dressing. In a small bowl, whisk together Greek yogurt, lime juice, honey, minced garlic, salt, and pepper. Adjust the seasoning to taste and set aside. Warm the tortillas according to package instructions. To assemble the tacos, spread a spoonful of black beans on each tortilla, followed by a scoop of roasted sweet potato mixture. Add corn kernels, cherry tomatoes, avocado slices, and fresh cilantro leaves on top. Drizzle the zesty lime dressing over the assembled tacos.
