Breakfast for dinner! Hubby needs to lose a lb a week, starting today. So I had this fennel bulb and decided to create a whole meal around it! Rene @raalvir loves breakfast food so I decided on a sausage hash with a roasted red pepper and creme fraiche sauce along side scrambled eggs. Did you know that most sausages have sugar added? I didn't and was surprised that my market butcher shop adds sugar to all their sausages. Why??? So, I had to drive further to Whole Foods, more out of principle than anything else. Here is the result, I kind of winged it. . 3 hot Italian sausages with casings removed 1 fennel bulb sliced 5 green onions chopped 8 oz sliced portobello mushrooms 2 tbs chopped parsley 1 tbs fresh thyme chopped 3 tbs olive oil Cook the sausage til browned and transfer to a bowl. Add olive oil, sautee mushrooms til their liquid evaporates and add to the sausage bowl. Sautee the fennel and green onions. Add the contents of the bowl, parsley and thyme. Salt to taste. . For the sauce: Roast a red pepper, peell and seed it.
