Ingredients: 2 lbs redskin potatoes, washed and cubed. 4 cloves garlic, minced. 1/2 cup milk. 4 tablespoons butter. Salt and pepper to taste. Chopped chives for garnish optional.
Instructions: Place the cubed potatoes and minced garlic in a large pot. Cover with water and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until potatoes are fork-tender, about 15-20 minutes. Drain the potatoes and garlic, then return them to the pot. Add milk and butter to the pot with the potatoes and garlic. Mash until smooth and creamy, using a potato masher or fork. Season with salt and pepper to taste. Garnish with chopped chives if desired before serving.
