Ingredients: 4 trout fillets. Salt and pepper to taste. 2 tablespoons olive oil. 3 tablespoons unsalted butter. 2 tablespoons capers, drained. 1 orange, zest and juice. 2 tablespoons chopped parsley.
Instructions: Add salt and pepper to the trout fillets. Put olive oil in a big skillet and heat it over medium-high heat. Spoon trout fillets into the pan. Cook for three to four minutes on each side, until golden and done. Take the trout out of the pan and set it aside. Melt the butter in the same pan over medium heat. It will take about two to three minutes for the butter to turn golden brown. To the browned butter, add the orange zest and orange juice. Mix it all together, then cook for one to two minutes. Cover the cooked trout fillets with the brown butter sauce. Add chopped parsley as a garnish before serving.
