British Asparagus season is in full swing. I love properly cooked asparagus with its bright, clean and grassy flavours. I only mention it being properly cooked because it has a tendency to be bitter/funky if it’s over cooked. Paired the lightly steamed asparagus with crispy pancetta, fried goose egg and lemon thyme.
