What's the relationship like between the Sheikah and the fairies?

Honestly, they probably are no different than the fairies and the Hylians. There might be a few Sheikah that have fallen further under the sway of the taint their blood carries that experience rather startling reactions to being exposed to creatures which help far more than they harm. It might be practice to keep fairies around Kakariko if only to ensure that they can catch someone before they actually succumb to the damning song that their blood sings. When there were more Sheikah, Impa might have kept a fairy or two at her doorway, so that when they inevitably came close she would know if something was wrong and she could help them. 

With declining numbers due to death or to them deciding that the royal family was not worth their families being known as lapdogs or fodder for a war so that they could buy time and moving out of the kingdom to the outskirts of other nations, there is little need for Impa herself to keep fairies, though she does find their presence soothing and often finds herself spending time in the fountains.

Does she have any specific phobias? Like, acrophobia, ophidiophobia, etc?

Atychiphobia is one, which is the fear of failure. Being unable to finish a given task by those she considers to be in a position of power over her is absolute failure. Its not something that will send her into fits, but she’ll certainly get quiet afterwards. Now, that said, she is the person that an entire race looks up to, and at the age of 25 no less. She’s nearly the only one left, so she has to work hard to make sure that she can keep them alive. That alone makes her afraid of failing, and knowing that she doomed every other Sheikah would throw her into a deep depression. She’s been trained to do this since she was extremely young. It is her only job aside from keeping Zelda alive.

Other than that, the fear of losing control of herself is very, very real. Bryik_ and I hold this headcanon, where the sheikah were created by Hylia using the eye of a demon. Pure blooded sheikah, are at a much higher chance of losing themselves to the urges that drive them. The threat always lurks in the back of her mind, especially as she listens to whatever whispers demons in her head make.

Not really sure about others, I’m sure I’ll think of some after I finish this.

Is Impa a good singer?

Yes! It is stated in canon that she sung Zelda’s lullaby to the young princess for some time. My personal headcanons say that she often sang and played a myriad of instruments when she was stressed out from the training and conditioning she did as a young girl. And that was often, as she had both Sheikah duties and Matriarchal training to do, she couldn’t get away from most of the things she was expected to do.

She does sing in both Sheikah and Hylian, though she prefers the former rather than the latter. Impa is fluent in both but Sheikah comes to her fast than anything else. Why would you want to sing in a second language that you struggle with? Sure it sounds wonderful, but Impa finds her own language beautiful.
