Shakshuka Vegetables is a delicious and healthy dish featuring a medley of vegetables simmered in a flavorful tomato sauce, with eggs poached on top. It's a Middle Eastern-inspired recipe that's perfect for breakfast, brunch, or dinner.
Ingredients: 2 tbsp olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 red bell pepper, diced. 1 yellow bell pepper, diced. 1 zucchini, diced. 1 can 14 oz crushed tomatoes. 1 tsp cumin. 1 tsp paprika. 1/2 tsp cayenne pepper. Salt and pepper to taste. 4-6 large eggs. Fresh parsley, chopped for garnish.
Instructions: Warm up a big pan with olive oil over medium-low heat. Put in the chopped onion and cook it until it turns clear. Add the minced garlic and cook for one more minute. Chopped up zucchini and red and yellow bell peppers should be added. Cook the vegetables in oil until they become soft. Add the tomato paste and spices cumin, paprika, cayenne pepper, salt, and pepper. Use a stir to mix. Turn down the heat, cover the pan, and let it simmer for 10 to 15 minutes, or until the vegetables are soft and the sauce gets thick. Make little holes in the sauce and put an egg in each one. Put the lid back on the pan and cook for another 5 to 7 minutes, or until the egg whites are set but the yolks are still runny. Add fresh chopped parsley as a garnish. Serve hot, right out of the pan.
