Ingredients: 1 cup pumpkin puree. 2 shallots, finely chopped. 1 tablespoon olive oil. 1/4 teaspoon dried sage. Salt and pepper to taste. 1/2 cup vegetable broth. 1/4 cup heavy cream optional. 8 ounces pasta of your choice.
Instructions: Put olive oil in a pan and heat it over medium-low heat. Add the chopped shallots and cook for about 3 to 4 minutes, until they become clear. Add the pumpkin puree and dried sage, and then add salt and pepper to taste. Add the vegetable broth and let it cook for 5 to 7 minutes, until the sauce gets thick. Add the heavy cream now and stir it in. Cook for two more minutes. In the meantime, cook the pasta until it's al dente according to the directions on the package. After the pasta is done, drain it and mix it with the pumpkin sauce until it's well covered. If you want, you can serve it hot with freshly grated Parmesan cheese and extra sage leaves on top.
