Salmon & Pesto
Salmon is the one thing i could eat every single day without getting sick of it!!! For lunch I decided to make a quick pesto sauce and add it on top to a piece of salmon, delicious!!! Recipe inspired by the wonderful Sharon Huang from my cooking diary.
Preheat the oven to 160C/325F.
To make the pesto, in a food processor, combine a handful of nuts, basil, parsley, and garlic.
Pulse, until well chopped. With motor running, add two teaspoon of oil in a stream. Transfer mixture to a bowl and stir in some parmesan cheese and salt to taste.
Store with a thin layer of oil to keep fresh and green. The parsley helps keep the bright green color too.
Season the salmon fillets lightly with sea salt and black pepper. Smear a layer of pesto on top of the fillets, then roast them in the preheated oven for about 10 to 15 minutes. Serve straightaway.
