Authentic Hungarian Gypsy Sauce
Ingredients:
100 grams of mushrooms
70 grams of tomato puree
1 deciliter of fresh chicken stock
4 tomatoes
3 sweet and sour pickles
2 cloves of garlic
1 onion
½ green Jalapeño pepper
½ green bell pepper
½ red bell pepper
½ bunch of fresh parsley
4 tablespoons of tomato ketchup
2 tablespoons of extra virgin olive oil
1 tablespoon of Sambal Manis
1 tablespoon of white caster sugar
1 tablespoon of white natural vinegar
1 tablespoon of silver onions
Cornstarch (optional)
Preparation:
Step 1:
Slice the mushrooms. Chop the parsley. Cut the pickles into cubes. Cut the tomatoes into cubes. Peel and chop the onion coarsely . Peel and press the garlic. Cut the green pepper into rings and remove the seeds. Cut the bell pepper into cubes and remove the seed lists.
Step 2:
Put oil in a pan and fry the onion, green pepper and garlic in it.
Step 3:
Add the mushrooms, tomatoes and bell peppers and fry for about 5 minutes until they soften a bit.
Step 4:
Add the tomato puree and fry for another minute or so.
Step 5:
Add the tomato ketchup, Sambal Manis, chicken stock, white caster sugar and white natural vinegar and let it simmer gently for a while.
Step 6:
Add the pickles and silver onions. If the sauce is too thin, thicken it with some cornstarch.
Step 7:
Finally, stir in the parsley.
