We often forget that much of Binondo’s food culture traces back to Fujianese roots.. dishes carried across water, adapted over time, until they became part of everyday life here.
And what remains is not complexity, but intention.
Food that was meant to sustain. To comfort. To continue.
We begin to feel how nourishment is not always about variety or excess. Sometimes, it is about consistency.. the kind that allows people to return, again and again.
We are not separate from these moments.
Even in brief meals, we are part of something shared.. a rhythm that has been practiced long before we arrived.
Perhaps this is kapwa, lived quietly.
In sitting beside one another. In eating without needing to explain. In recognizing that care can be simple.
