Ingredients: 1 kg fresh clams, cleaned. 100g Serrano ham, finely chopped. 1/4 cup dry sherry. 2 cloves garlic, minced. 2 tablespoons olive oil. 1/4 teaspoon red pepper flakes. 2 tablespoons chopped parsley. Salt and black pepper to taste.
Instructions: Heat olive oil in a large skillet over medium heat. Add minced garlic and chopped Serrano ham, saut until fragrant and ham starts to crisp. Add red pepper flakes and stir for another minute. Increase heat to high, add cleaned clams to the skillet, and pour in dry sherry. Cover and cook for about 5-7 minutes or until clams open, shaking the skillet occasionally. Discard any unopened clams. Season with salt and black pepper to taste, garnish with chopped parsley. Serve hot, with crusty bread to soak up the delicious juices.
