When tossed with orzo pasta, tender shrimp, savory Parmesan cheese, and bright vegetables make for a delicious meal.
Ingredients: 1 lb shrimp, peeled and deveined. 1 cup orzo pasta. 2 cups spinach, chopped. 1 bell pepper, diced. 1 cup grated Parmesan cheese. 2 cloves garlic, minced. 2 tbsp olive oil. Salt and pepper to taste.
Instructions: Cook orzo according to package instructions, drain, and set aside. In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant. Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside. In the same skillet, add diced bell pepper and cook until slightly softened. Add chopped spinach to the skillet and cook until wilted. Return cooked orzo and shrimp to the skillet. Stir in grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste. Serve hot, garnished with additional Parmesan cheese if desired.
