Super Easy Chicken and Stuffing Casserole
This recipe is vaguely based on one I found on the back of a stovetop box years ago and have modified the way I like best. It is really flexible I’ve done it with leftover turkey as the protein and with barley or rice as the starch, you could even add vegetables.
2 boxes of stuffing. (Kroger brand has a little less salt and a lot less sage than some others which is why i use it.)
1 can condensed cream of something soup (I like cream of chicken best, don’t like mushroom or broccoli, but who am I to judge?)
about 1 cup sour cream (I finished off the pictured tub, which was about half full)
2-3 medium to large chicken breasts (did not intend to get the individually wrapped ones but whatever)
Preheat oven to 400 degrees
in extra large bowl, mix soup and sour cream until all one color
chop Chicken into chunks and stir into sauce until well coated. the smaller the chunks the more sauce they absorb, but may be more prone to drying out before being cooked
Stir in stuffing one box at a time, then add water. I boil the water but I don’t know if that is necessary
line rectangular cake pan with foil and spray well with cooking spray (iIve tried using butter, but it doesn’t add much flavor and usually just makes the casserole stick), transfer bowl contents, and spread evenly
Bake 20-30 minutes until well browned and a minumum of 165 degrees in the center
this makes great leftovers which is why i make so much at once.
