Some of you have been asking me to yap about the anatomy of Gihun's hand injury, so here goes :P

As we can (kinda poorly) see, the knife had entered his hand somewhere between the 3rd and 4th metacarpal bones (green in the muscles diagram)
Besides massive bleeding, this would cause great damage to his muscles and nerves, and considering he received almost zero medical attention for it, chances are the wound also got infected, damaging even more of the tissue
Muscles
Definitely busted
2nd and 3rd lumbricals (blue) - responsible for curling the fingers towards the palm, as well as extending the fingertips. Without their function, the middle and ring finger are permanently stuck in an extended position
dorsal interossei II (purple) and palmar interossei II (orange) - these pull the middle finger and ring finger towards each other, to the center of the hand. Without their function, the fingers are stuck away from each other, kind of like when you're doing the Vulcan greeting
Possibly damaged
Adductor policis (yellow) - pulls the thumb towards the palm. If damaged, it could affect his ability to hold objects
3rd and 4th flexor digitorum profundus (brown) - tendons of muscles responsible for flexing the tips of the fingers. if damaged, he couldn't curl his middle and ring finger at all. In my drawings, I chose to leave them working to give his fingers that clawed appearance
Nerves (grey = numb)
Definitely busted
Superficial branches of median nerve (yellow) - responsible for the feeling in the index finger, middle finger and ring finger, as well as part of the thumb and palm. Obviously, if damaged, all that area would be numb
Deep branches of the ulnar nerve (orange, palmar side) - responsible for controling the lumbrical muscles, dorsal interossei muscles and palmar interossei muscles. So even if the muscles themsevles weren't damaged by the knife, they still wouldn't work. Double trouble, sorry Gihun
Superficial branches of the ulnar nerve (orange, dorsal side) - responsible for the feeling in part of the ring finger, middle finger and the dorsal skin of the hand. Because of that, the area around the wound would be numb
Possibly damaged
Just about any nerve near the wound, especially when it comes to median nerve that is dangerously close. Could take away the feeling in the entire thumb, entire middle finger, entire index finger... maybe even the entire palm. In that case, holding objects would be borderline impossible
Results
Loss of mobility - with damaged muscles and nerves, the middle and ring finger are paralysed in the extended position, only barely flexing at the tips if Gi-hun curls his hand into a fist.
This means he'd have a difficulty holding and handling objects. Definitely say goodbye to multitasking - no more cigs while on the phone
Numbness - damaged nerves means no feeling in large portion of the hand, especially in the affected fingers and palm
Muscle atrophy - muscles that don't work slowly lose their mass, thinning out his hand into a bony shadow of its former self
Muscle weakness and tremors
Pins and needles, cramping and other painful or uncomfortable sensations caused by the injured nerves and muscles
And possibly more but I'm not an expert, just a nerd with a hyperfixation xD
