DUMAGUETE, NEGROS ORIENTAL -- City of Gentle People's very own frozen cookie dessert 'Silvanas' suddenly flopped to #29 with a 4-star score rating for 50 of the Best Cookies in the world against Argentina's #1 rank 'Alfajores' in South America, based on an online travel and food magazine 'TasteAtlas' last Sunday (April 27th, 2025 -- Dumaguete local time).

The snack version of its traditional Sans Rival cake is a cookie sandwich made with two (2) cashew-meringue wafers that are held together with a thick layer of buttercream and are generously coated in cashew crumbs. Cake version in comparison comes with a layered dessert of buttercream, meringue and chopped cashews. It was internationally recognized when served cold, due to insisted public demand. This roughly inspired by a classic French dessert 'Dacquoise' in France, turned into a Philippine adaptation of both Sans Rival and Silvanas in Dumaguete City alone.

People hailing from Negros Oriental or visiting from other countries flock here to purchase pasalubong (or food souvenirs) to take home when they leave Dumaguete City, whether they are national on our side or foreign tourists abroad. This treasured birthplace suffered a serious and undeniable setback in its ranking.

Silvanas continues to be a popular local dessert treat for the Negrosanons that holds a special place in Dumaguete's traditional food culture, even though its global rankings have badly plummeted. Local baker industry and tourist officials seek immediate solutions to restore global recognition of the dessert and preserve its international popularity. The flagship store of 'Sans Rival Cakes & Pastries' in Dumaguete City has yet to receive a full statement today.

To preserve its sweet legacy, recommendations include enhancing marketing efforts in the sales of advertising, refining recipe techniques, and promoting the unique cultural story behind Silvanas to regain its competitive global standing. Silvanas is available exclusively in Dumaguete with branches of Bais City in Negros Oriental, as well as expanded in Cebu City and Metro Manila.
