It may not be much to look at but it tastes delicious. It’s a #savourybreakfast #breadpudding that you can make in the microwave. It’s a really simple recipe. You take two pieces of bread and cut them up into little cubes and then add whatever vegetables and protein that you like. Add some salsa and cheese and microwave the whole thing for about three minutes stirring every minute. I eat a variation of this for breakfast all the time. You can make it with bread or tortillas or polenta and it works out great. It also works fantastic with cornmeal based breads.
