With Italian-style ingredients, this Keto Tuscan Chicken Skillet is a tasty and creamy dish. It's simple and quick to make, making it perfect for a weeknight dinner.
Ingredients: 4 boneless, skinless chicken breasts. 2 tablespoons olive oil. 4 cloves garlic, minced. 1 cup cherry tomatoes, halved. 1 cup baby spinach leaves. 1/2 cup heavy cream. 1/4 cup grated Parmesan cheese. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Season chicken breasts with salt, pepper, and dried oregano. In a large skillet, heat olive oil over medium heat. Add seasoned chicken breasts to the skillet and cook until golden brown and cooked through, about 6-8 minutes per side. Remove chicken from skillet and set aside. In the same skillet, add minced garlic and saut until fragrant, about 1 minute. Add cherry tomatoes to the skillet and cook until they start to soften, about 2 minutes. Stir in baby spinach leaves and cook until wilted. Pour in heavy cream and grated Parmesan cheese, stirring until the sauce thickens slightly. Return cooked chicken breasts to the skillet, coating them with the sauce. Cook for an additional 2-3 minutes, allowing flavors to meld together. Serve hot, garnished with additional grated Parmesan cheese if desired.
