A delicious and comforting vegan casserole with penne pasta, vegetables, and vegan cheese.
Ingredients: 1 lb penne pasta. 1 can 14 oz diced tomatoes. 1 can 14 oz tomato sauce. 1 onion, diced. 2 cloves garlic, minced. 1 bell pepper, diced. 1 zucchini, diced. 1 cup frozen peas. 1 cup vegan cheese, shredded. 1/4 cup nutritional yeast. 1 tsp dried oregano. 1 tsp dried basil. Salt and pepper, to taste.
Instructions: Preheat oven to 375F 190C. Cook penne pasta according to package instructions, drain, and set aside. In a large skillet, saut onion, garlic, bell pepper, and zucchini until softened. Add diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Cook for another 5 minutes. Stir in cooked pasta, frozen peas, and nutritional yeast. Mix well. Transfer the mixture to a casserole dish and sprinkle vegan cheese on top. Bake for 20-25 minutes, until cheese is melted and bubbly. Serve hot and enjoy!
