This Walnut Parsley Parmesan Linguine is a simple but tasty pasta dish that brings out the flavors of the fresh parsley, the nutty walnuts, and the rich Parmesan cheese. It's easy to make and great for a cozy dinner during the week.
Ingredients: 250g linguine pasta. 1/2 cup chopped walnuts. 1/4 cup chopped fresh parsley. 1/2 cup grated Parmesan cheese. 2 tablespoons olive oil. Salt to taste. Ground black pepper to taste.
Instructions: Cook linguine pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water. In a large skillet, heat olive oil over medium heat. Add chopped walnuts and toast for 2-3 minutes until fragrant and lightly browned. Add cooked linguine to the skillet with toasted walnuts. Toss to combine. Stir in chopped parsley and grated Parmesan cheese. If the pasta seems dry, add reserved pasta water gradually until desired consistency is reached. Season with salt and ground black pepper to taste. Toss well to combine. Serve hot, garnished with additional Parmesan cheese and parsley if desired.
