Ingredients: 1 cup all-purpose flour. 1 cup rolled oats. 1/2 cup granulated sugar. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup unsalted butter, melted. 2 large eggs. 1 cup plain Greek yogurt. 1 tsp vanilla extract. 1 cup fresh blueberries.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a blender, combine the flour, rolled oats, sugar, baking powder, baking soda, and salt. Blend until the dry ingredients are well combined. Add the melted butter, eggs, Greek yogurt, and vanilla extract to the blender. Blend until the batter is smooth and all the ingredients are fully incorporated. Gently fold in the fresh blueberries into the batter using a spatula. Pour the muffin batter evenly into the prepared muffin tin, filling each cup about 2/3 full. Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.
