Ingredients: 1 tbsp olive oil. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 10 oz package frozen chopped spinach, thawed and drained. 1 14 oz can artichoke hearts, drained and chopped. 8 oz cream cheese, softened. 1/2 cup sour cream. 1/2 cup mayonnaise. 1 cup shredded mozzarella cheese. 1/2 cup grated Parmesan cheese. 1/2 tsp garlic powder. Salt and pepper to taste.
Instructions: Preheat oven to 375F 190C. Heat olive oil in a skillet over medium heat. Add chopped onion and minced garlic, saut until softened, about 3-4 minutes. Stir in thawed spinach and chopped artichoke hearts, cook for another 2-3 minutes. Reduce heat to low, add cream cheese, sour cream, mayonnaise, mozzarella cheese, Parmesan cheese, garlic powder, salt, and pepper. Stir until well combined and cheeses are melted. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the top is golden brown and bubbly. Remove from oven and let it cool slightly before serving.
