The fresh spring vegetables in our Skillet Spring Veggies Salad are mixed with a tangy balsamic dressing and topped with creamy feta cheese. This dish goes well with any meal.
Ingredients: 2 cups mixed spring vegetables e.g., asparagus, peas, baby carrots. 2 tablespoons olive oil. Salt and pepper to taste. 1 cup cherry tomatoes, halved. 1/4 cup red onion, thinly sliced. 2 cups mixed greens. 1/4 cup crumbled feta cheese. 2 tablespoons balsamic vinegar. 1 tablespoon honey. 1 teaspoon Dijon mustard.
Instructions: In a pan, heat the olive oil over medium-high heat. Add the mixed spring vegetables and cook for 5 to 7 minutes, until the vegetables are soft but still crisp. Add pepper and salt. To make the dressing, mix the honey, Dijon mustard, and balsamic vinegar in a small bowl with a whisk. Sauted spring vegetables, cherry tomatoes, red onion, and mixed greens should all be put in a large salad bowl. Pour the dressing over the salad and mix it all together. Add crumbled feta cheese on top. Serve right away and enjoy!
