A classic side dish that goes well with any meal is creamy au gratin potatoes. A thick cheese sauce covers layers of potatoes and onions that have been thinly sliced. The dish is then baked until it is bubbly and golden brown.
Ingredients: 6 large potatoes, peeled and thinly sliced. 1 onion, thinly sliced. 4 tablespoons butter. 4 tablespoons all-purpose flour. 2 cups milk. 1 1/2 cups shredded Cheddar cheese. Salt and pepper to taste. 1/4 cup grated Parmesan cheese.
Instructions: Preheat oven to 375F 190C. Grease a 9x13 inch baking dish. In a saucepan, melt the butter over medium heat. Stir in flour until smooth. Gradually add milk, stirring constantly until thickened. Layer half of the potatoes and onion slices into the baking dish. Pour half of the sauce over the potatoes. Season with salt, pepper, and half of the Cheddar cheese. Repeat layering potatoes, sauce, and Cheddar cheese. Cover with foil and bake for 1 hour. Uncover and sprinkle Parmesan cheese over the top. Return to the oven and bake uncovered for an additional 15 minutes, or until potatoes are tender and the top is golden brown.
