Soya Chunks Curry
Recipe : Soya Chunks Curry
Serves : 4-6 persons
Ingredients :
1 Cup Soya Chunks
2 Tablespoons Ginger Garlic Paste
2 Tomatoes
1 Large Onion
1 Cup Shredded Coconut/ Coconut Milk
2-3 Pieces Garlic Peeled And Crushed
2 Tablespoons Chilli Powder
1 Teaspoon Dhania Powder (Coriander Powder)
2 Teaspoons Jeera Powder (Cumin Powder)
1 Teaspoon Garam Masala
2 Teaspoons Oil
2 Tablespoons Besan Powder (Gram Powder)
5-6 Curry Leaves
½ Cup Sweet Corn Niblets (Boiled)
½ Cup Green Peas (Boiled)
1 Potato (Optional) (Boiled)
Method :
To make the soya chunks :-
Soak 1 cup of soya chunks into one pan of water for upto 30min. Drain the water and cook with 4 cups of fresh water in a pressure cooker for 3min.Drain immediately and put 2 tablespoons of ginger garlic paste and leave.
In one pan quarter the tomatoes and boil in sufficient water. In another sauce pan fry the onions till golden brown.
Add in (pan with the onions) the prepared soya chunks and salt and let any extra moisture evaporate.
Add (in pan with onions) all dry spices and curry leaves, fry for 2min and switch off.
In a grinding jar put in coconut, garlic and boiled tomatoes without the skin (the skin peels off easily when cooked) without the stock of the tomatoes. Grind to a smooth paste.
Put sauce pan with the soya chunks on medium flame add in the tomato stock and coconut mixture. Cook for 5min more and lastly add the boiled corn, peas and potatoes.
Add salt to taste and serve with steamed rice(preferred) or have with bread.
