Ingredients: 1 cup all-purpose flour. 1 cup cornmeal. 2 tablespoons sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1 cup milk. 1/4 cup vegetable oil. 2 large eggs. 1 cup shredded cheddar cheese. 1/2 pound ground beef. 1/2 cup diced onion. 1/2 cup diced bell pepper. 1/2 cup diced tomatoes. 1/4 cup ketchup. 1/4 cup barbecue sauce. 1/4 teaspoon chili powder. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. 1/4 teaspoon paprika. 1/4 teaspoon salt. 1/4 teaspoon black pepper. Cooking spray.
Instructions: In a large mixing bowl, combine the flour, cornmeal, sugar, baking powder, and salt. In another bowl, whisk together the milk, vegetable oil, and eggs. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the shredded cheddar cheese. Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with cooking spray. Pour the waffle batter onto the preheated waffle iron and cook until golden brown and crisp. While the waffles are cooking, in a skillet over medium heat, cook the ground beef until browned and cooked through. Drain any excess fat. Add the diced onion, bell pepper, and tomatoes to the skillet with the ground beef. Cook for 2-3 minutes until the vegetables start to soften. Stir in the ketchup, barbecue sauce, chili powder, garlic powder, onion powder, paprika, salt, and black pepper. Simmer for an additional 5 minutes, stirring occasionally.
