Ingredients: 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/2 cup packed brown sugar. 1 large egg. 1 teaspoon vanilla extract. 1 cup semi-sweet chocolate chips. 8 large marshmallows. 16 graham cracker squares.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a small bowl, whisk together the flour, baking soda, and salt. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until creamy. Add the egg and vanilla extract to the butter-sugar mixture and mix until well combined. Gradually add the dry ingredients to the wet ingredients and mix until a soft cookie dough forms. Stir in the chocolate chips. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet. Bake in the preheated oven for 8-10 minutes or until the edges are golden brown. While the cookies are baking, cut the marshmallows in half. Remove the cookies from the oven and press a marshmallow half onto the center of each cookie. Return the cookies to the oven and bake for an additional 1-2 minutes until the marshmallows are slightly melted. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Place a graham cracker square on top of each marshmallow and gently press down to create a sandwich.
