This vegan potato salad is creamy and full of flavor. It's great for a picnic or as a side dish. It doesn't have any oil and is full of fresh vegetables, so it's a healthy and filling choice for any event.
Ingredients: 4 cups diced potatoes. 1/2 cup diced red onion. 1/2 cup diced celery. 1/2 cup diced red bell pepper. 1/2 cup diced dill pickles. 1/4 cup fresh chopped parsley. 1/4 cup vegan mayonnaise. 2 tablespoons Dijon mustard. 2 tablespoons apple cider vinegar. 1 tablespoon maple syrup. 1/2 teaspoon garlic powder. Salt and pepper to taste.
Instructions: It will take about 10 to 12 minutes of boiling the diced potatoes until they are soft enough to pierce with a fork. Run some water over them and let them cool down. Put the cooled potatoes, diced red onion, diced celery, diced red bell pepper, diced dill pickles, and fresh chopped parsley in a large bowl. Put the vegan mayonnaise, Dijon mustard, apple cider vinegar, maple syrup, garlic powder, salt, and pepper in a different small bowl. Use a whisk to mix the ingredients well. Pour the dressing over the potatoes and gently toss everything together until the dressing covers all of the potatoes. Put the potato salad in the fridge for at least 30 minutes so that the flavors can mix. If you want, you can add more parsley to the top of the vegan potato salad before serving it cold.
