Michael Pollan, an author, journalist, activist and professor looks at the importance of food – it’s history, it’s importance on human health, and ultimately it’s role in today’ economy.
In his talk, How Cooking Can Change Your life, Pollan discusses the importance of cooking your own food is to your health and why there has been a rise in fast and processed food in the last 50 years.
Some important points he makes in his speech:
Fast food corporations drive down the cost of food and force economies of scale on farming.
McDonald’s insist that the potatoes they buy to make their perfect French fries are perfect and have no blemishes. However, in order for their potato farmers to meet these un-natural requirements, the farmers have to spray their crop with a very harsh and toxic pesticide. So toxic that the farmers themselves refuse to go outside into their potato fields for five days after the spray.
Corporations cook very differently than people, they use vast amounts of salt, fat and sugar….they are three incredibly attractive and incredibly cheap materials….and incredibly addictive.
Cravability = snackability = addictive
Food additives – as soon as you are cooking food en masse to have such a long shelf life you need a lot of chemicals to make it look like it was cooked more recently…
