Watermelon Oriental Dessert

Snow-ear mushroom and yellow rock sugar are sold at Asian supermarkets. Snow-ear mushroom is usually labeled 'white fungus' on the packaging. Yellow rock sugar is a type of crystalized cane sugar.

Ingredients:

1/2 cup dried snow ear mushroom (white fungus)

3 large pieces of yellow rock sugar

water

watermelon cubes

canned fruit cocktail

Directions:

Soak dried snow-ear in water for 1/2 hour.

Boil 4 cups of water. Add snow-ear and rock sugar.

Turn heat to low. Simmer for 1.5 hours.

Cool and chill.

Serve with watermelon cubes and fruit cocktail.
