norwegian meat & vegetable soups — the original cozy food. think tender chunks of lamb or beef, potatoes, carrots, leeks, swede (rutabaga), a handful of pearl barley, and maybe some cabbage if you’re feeling wild. everything goes into one massive pot with water, salt, peppercorns, and a bay leaf or two. then you just… let it simmer for hours until the whole house smells like childhood and safety.
