🛒 INGREDIENTS

✔️ 1 cup (200g) granulated sugar ✔️ ¼ cup (60ml) water ✔️ ½ cup (115g) unsalted butter, cubed ✔️ ½ cup (120ml) heavy cream (plus extra 1 tbsp if needed) ✔️ Pinch of salt (optional, for balance)

📋 INSTRUCTIONS

1️⃣ MELT SUGAR

In a light-colored saucepan, mix sugar + water.

Heat over medium-low until sugar dissolves (do not stir!).

Swirl pan occasionally until golden amber (~10 mins).

2️⃣ ADD BUTTER & CREAM

Carefully whisk in butter (mixture will bubble violently!).

Slowly pour in cream + salt, whisking until smooth.

Cook 2-3 mins until slightly thickened (should coat a spoon).

3️⃣ SET & CUT

Pour into a parchment-lined loaf pan.

Cool 2 hours at room temp, then refrigerate 30 mins to firm.

Cut into squares with a greased knife.
