A tasty, gluten-free alternative to regular French bread that is great for vegans and people who can't eat gluten. The outside of this bread is crunchy, and the inside is soft and airy.
Ingredients: 3 cups gluten-free all-purpose flour blend. 2 1/4 teaspoons active dry yeast. 1 teaspoon sugar. 1 teaspoon salt. 1 1/4 cups warm water. 2 tablespoons olive oil. 1 teaspoon apple cider vinegar.
Instructions: In a small bowl, dissolve sugar in warm water, then sprinkle yeast on top. Let it sit for 5 minutes until frothy. In a large mixing bowl, combine gluten-free flour blend and salt. Add the yeast mixture, olive oil, and apple cider vinegar. Mix until a dough forms. Knead the dough on a lightly floured surface for about 5 minutes, until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size. Preheat the oven to 375F 190C. Punch down the risen dough and shape it into a baguette shape on a baking sheet lined with parchment paper. Make diagonal cuts on top of the dough with a sharp knife. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and sounds hollow when tapped. Let the bread cool on a wire rack before slicing and serving.
