For a tasty seafood treat, try this BBQ recipe for tender sole fillets stuffed with a flavorful mix of crab and shrimp and grilled to perfection.
Ingredients: 4 sole fillets. 1/2 lb crab meat. 1/2 lb shrimp, peeled and deveined. 1/2 cup breadcrumbs. 1/4 cup chopped fresh parsley. 2 cloves garlic, minced. 1 lemon, juiced. Salt and pepper to taste. 2 tbsp olive oil. 1/4 cup melted butter.
Instructions: Set the grill on medium-high heat. Put crab meat, shrimp, breadcrumbs, parsley, garlic, lemon juice, salt, and pepper in a bowl. Place the sole fillets on a baking sheet and add a spoonful of the crab and shrimp mixture to each one. You can use toothpicks to hold the fillets together as you roll them up. Add more salt and pepper to taste and brush the stuffed sole with olive oil. Grill the stuffed sole on a hot grill for four to five minutes on each side, or until the fish is fully cooked. Brush the stuffed sole with melted butter in the last few minutes of grilling to make it taste even better. Take it off the grill and let it sit for a few minutes before serving. If you want, you can add more chopped parsley and lemon wedges as a garnish.
