This loaded spaghetti pasta salad tastes like all the best parts of Greek food in one tasty dish. It's great for potlucks, picnics, or as a cool side dish with any meal.
Ingredients: 1 lb spaghetti pasta. 1 cup cherry tomatoes, halved. 1 cucumber, diced. 1/2 red onion, thinly sliced. 1/2 cup Kalamata olives, sliced. 1/2 cup feta cheese, crumbled. 1/4 cup fresh parsley, chopped. 1/4 cup olive oil. 2 tablespoons red wine vinegar. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Cook spaghetti according to package instructions until al dente. Drain and rinse under cold water. In a large mixing bowl, combine cooked spaghetti, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley. In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper. Pour dressing over the pasta salad and toss until well coated. Chill in the refrigerator for at least 30 minutes before serving. Garnish with additional parsley and feta cheese if desired before serving.
