This soy-lemon marinated flank steak is packed with flavor and perfectly complemented by the peppery arugula. It's a simple yet elegant dish that's ideal for a quick weeknight dinner or a special occasion.
Ingredients: 1 lb flank steak. 1/4 cup soy sauce. 2 tablespoons lemon juice. 2 cloves garlic, minced. 1 tablespoon honey. 1 teaspoon grated ginger. Salt and pepper to taste. 2 cups arugula.
Instructions: Pour soy sauce, lemon juice, honey, minced garlic, and grated ginger into a bowl. This is how you make the marinade. Put the flank steak in a bag that can be closed again, and then pour the marinade over it. Put the bag closed and put it in the fridge for at least an hour, or better yet, overnight for the best results. Warm up the grill over medium-high heat. Take the flank steak out of the marinade and throw away the extra marinade. Add salt and pepper to the steak. For medium-rare, or any other level of doneness you like, grill the steak for four to five minutes on each side. After taking the steak off the grill, let it rest for 5 minutes before cutting it. Cut the steak against the grain into thin slices. Put the steak slices on top of a bed of arugula. If you want to add more flavor, you can drizzle any leftover marinade over the steak and arugula.
