These cosmic sweet potato chocolate truffles are a heavenly blend of creamy sweet potato, rich almond butter, and decadent chocolate. Perfect for satisfying your sweet cravings with a touch of cosmic sparkle!
Ingredients: 2 medium sweet potatoes, peeled and cubed. 1/2 cup almond butter. 1/4 cup coconut flour. 1/4 cup maple syrup. 1 tsp vanilla extract. 1/4 tsp sea salt. 1/2 cup vegan chocolate chips. 1 tbsp coconut oil. Optional: edible glitter or shimmer dust for cosmic effect.
Instructions: For about 10 to 15 minutes, steam the sweet potato cubes until they are soft. Put the steamed sweet potatoes, almond butter, coconut flour, maple syrup, vanilla extract, and sea salt in a food processor. Blend the ingredients together until the mixture is smooth. Spread the dough out into truffle-sized balls and set them on a baking sheet lined with parchment paper. Fridge the baking sheet with the truffles for about 30 minutes to make them firm. In a bowl that can go in the microwave, melt the coconut oil and vegan chocolate chips for 30 seconds at a time, stirring in between each time. Using a fork, dip each frozen truffle into the melted chocolate and tap off any extra chocolate. The chocolate-covered truffles should be put back on the baking sheet that has been lined with parchment paper. If you want, you can sprinkle them with edible glitter or shimmer dust. If you want the chocolate coating to set, put the truffles back in the freezer for another 10 to 15 minutes. Once the truffles are set, put them in a container that won't let air in and put it in the fridge until you're ready to serve them.
