Ingredients: 1 cup lentils. 4 cups vegetable broth. 1 onion, diced. 2 carrots, chopped. 2 celery stalks, sliced. 2 garlic cloves, minced. 1 tsp cumin. 1 tsp turmeric. 1/2 tsp paprika. Salt and pepper to taste. 2 tbsp olive oil. Fresh parsley for garnish.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Chop up some carrots and celery and add them along with the minced garlic. It will take about 5 minutes of cooking until the vegetables are soft. Mix in the pepper, salt, turmeric, cumin, and lentils. Use a stir to mix. Add the vegetable broth and boil it. Turn down the heat, cover, and let it cook for 20 to 25 minutes, or until the lentils are soft. Set the seasoning if you need to after it's done. Serve hot with fresh parsley on top.
