MEATBALLS. I hadn't made these little balls of joy in awhile, so I browsed Pinterest until I came across this recipe courteous of Jessica Alba. Meatballs with turkey and a few of my favorite veggies? Count me in. You could pair these with a lot of different dishes, but I decided to make spaghetti. Delicious.
Ingredients
1 pound lean ground turkey
1/2 cup panko breadcrumbs
1/8 cup finely chopped carrots
1/8 cup finely chopped zucchini
1/8 cup finely chopped onion
1 large egg
1 tablespoon Italian seasoning
1/2 tablespoon coarse sea salt
1 tablespoon olive oil
1/4-1/2 cup low-sodium chicken broth

Directions
1. In a large bowl, mix turkey, panko, carrots, zucchini, onion, eggs, Italian seasoning, and salt until well combined; form into 1-inch balls.
2. Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning, until browned, about 7 minutes.
3. Add 1/4 cup chicken brown; cover and reduce heat to low. Cook until liquid is almost completely absorbed, about 7 minutes. Add remaining 1/4 cup broth and increase heat to medium; cook, uncovered, until liquid is absorbed. Serve.
