These PAN CON TOMATE burgers will take you to Spain in a mouth. It's like a burger, but with juicy patties, garlicky aioli, and fresh tomato slices instead of rice. It's a delicious mix of flavors!
Ingredients: 4 burger patties beef or your choice. 4 hamburger buns. 2 tomatoes, sliced. 1 cup arugula. 1/2 cup mayonnaise. 2 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste. 4 slices of Manchego cheese optional.
Instructions: Preheat your grill to medium-high heat. Season the burger patties with salt and pepper on both sides. Grill the patties for about 4-5 minutes per side for medium-rare, or longer if you prefer a different level of doneness. While the patties are cooking, brush the burger buns with olive oil and toast them on the grill until they are lightly golden brown. In a small bowl, mix the minced garlic with the mayonnaise to create a garlic aioli. Set aside. Once the patties are almost done, place a slice of Manchego cheese on each patty and allow it to melt slightly. To assemble the burgers, spread the garlic aioli on the toasted bun halves. Place a handful of arugula on the bottom half of each bun. Add a slice of tomato on top of the arugula. Place a cooked patty with melted cheese on top of the tomato.
